Can you see our neighbours lined up on their front balcony? These three dogs amuse me no-end. They don't like coming out in the rain, but watch the traffic from their door step.
What are you good at? I'm excellent at making lasagne. In fact, if there was some sort of award for making just lasagne, I'd scoop the pool and walk away with the Lasagne Crown.
I'm going to type out my recipe just for you. Because I like you and I promised my mother I'd do it ages ago. It'll be a boring read, but it's worth it. I change the recipe a bit each time, in terms of amounts of herbs and salami and salt etc.

Lasagne MMMC-style
Meat Sauce
1x tbs oil
1x onion, finely diced
500g minced beef
20g Danish salami, finely diced
1.5 - 2 tsp thyme, basil, sage, parsley
800g tin crushed tomatoes
1x tsp salt
1x tsp sugar
3-4 tbs tomato paste
Bechamel Sauce
2x tbs butter
4x tbs plain flour
2 cups milk
salt and pepper to taste
125g grated cheese
dash of nutmeg
1x packet fresh lasagne sheets
3 extra cloves of garlic
1x tbs grated parmesan
( I also used grated mozarella for the top)
METHOD MINCE
Heat oil in large heavy-based pan and gently fry onion and garlic for 5 mins. (I crush one or two cloves depending on size)
Add mince and then salami and herbs (I use a lot of herbs. Because herbs are key).
Fry over medium heat, stirring until meat browns and onion and garlic are transparent.
Add tomatoes, salt, sugar and tomato paste. Mix well.
Add another two whole cloves of garlic, cover and simmer for an hour, stirring as you see fit.
METHOD BECHAMEL SAUCE
Melt butter in medium saucepan and stir in flour over medium heat.
Gradually stir in milk until mix is smooth.
Mix in salt, pepper and cheese.
Stir constantly until sauce thickens and starts to bubble and add a dash of nutmeg.
ASSEMBLE
Preheat oven to 200 degrees C.
Line a greased baking dish with a layer of lasagne sheets, then spread 1/2 meat sauce, bechamel sauce and cover with another layer of lasagne sheets.
Repeat once more.
Sprinkle with a crazy mix of grated cheddar, grated mozarella and grated parmesan.
Cook in the oven for 35 mins or until the top is golden brown.
Stand for 10 minutes (Not you. The Lasagne. You sit back and take the accolades.)


Even your lasagne has a Danish influence. It looks positively delicious - so good I can smell it!

Coconutty Sonia, you're one of the nicest people in blogland. You say it like you think it. I feel sick for Annie too. On top of everything a mother has to deal with, this is one more thing Annie has to cope with. Mothers should be paid a fortune for what they do for nothing.

ReplyDeleteI actually used Hungarian salami today. I figured it was close enough. And I used 40g rather than 20g. It's a flexible recipe. That always tastes differently delicious.
I'd scream if you flew down for a drink! I think that'd be the absolute trick!

ReplyDeletePoor dogs. I know how they feel, I have been indoors for the past 3 weekends with a bad back and then a cold - dying to get out there and do stuff. This weekend I am indoors again studying (thought I had better get onto it and do some work - 3 weeks into the semester).
